Mini taco salads. A very fun lunch to make with the boys. They were thrilled! We cut tortillas into 4" circles, pressed those into greased muffin tins, baked them at 350 for 15 minutes, cooled them, and then filled them with taco meat, lettuce, avocado, tomato, cheese, and sour cream. :)

Jay is continuing to do super with his healing. We are very thankful!
